THREE WORDS THAT WILL NEVER COME OUT OF MY MOUTH ..EVER!!!!
Quite on the very very contrary, I LOVE SALADS!!!!!!!!! I 'm quite crazy about them!!!
Greek salads(My personal favorite, I now literally eat this almost everyday, Recipe below), Italian salads, Mediterranean salads, African salads and infact, any mixture of vegetables that suits my palate, doused with a generous drizzle of olive oil, lemon juice, thick balsamic vinegar or whatever mix I try out and fall in love with!! (It was at this point that hubby gave up!!!) I also added the alfresco Recipe below.
Infact, one of the best things about them is that they are so easy to put together in mins. (I am a mum of three, so all easy meals are welcome).
Today, I 'll share two of my favorite salads .
Again, I 'm not a chef so I need to add that Traditional Greek salads have fewer ingredients mostly cucumber, tomatoes, onions and Feta cheese with a generous drizzle of olive oil, lemon juice, a pinch of salt and black pepper .
However, I tweak recipes a bit to suit my taste buds because at the end of the day, you should be able to not just eat but also enjoy what you eat.

Chié 's Greek Salad .
Ingredients
Baby tomatoes (a handful).
Half a cucumber (cut up into squares).
Spinach (a handful)
Pomegranate seeds (for topping).
Black and green olives (5 of each)
One Avocado (deskinned, deseeded and cut in squares).
Feta cheese ( if you can't find it around where you live, you can still enjoy your salad, just saying.. ).
Peanuts (for topping. You can also use any mixture of roasted nuts you like).
One lemon ( all the juice).
Balsamic vinegar (the thick one, See link below for my favorite).
A pinch of salt.
A pinch of black pepper.
Instructions
In a whatever plate or bowl you wish to use, layer the bunch of spinach at the base .
Add the tomatoes, cucumber, olives, avocado and Feta cheese.
Squeeze your lemon juice on it,
Drizzle your olive oil on it,
Add a pinch of salt.
Toss them all together gently to mix using salad tossers (See link below) or using two forks or spoons.
Drizzle your thick balsamic vinegar over it. (I am pretty generous at this stage !!!!!!).
Add your roasted Peanuts or any roasted mix of nuts you like,
And top with pomegranate seeds (optional).
. Add a pinch of black pepper all around it and that's it!!

And if you want to be extra , you can add some roasted chicken pieces, pan grilled garlic prawns or Salmon on top and Ahhhhhhhhhhhhhhh, delicious!!!!!!!.
Chié 's Random Veggies Salad (or Alfresco Salad If I want to sound posh!)
This is really easy to make and I literally use whatever veggies I have in the fridge. I added some mangoes to add some sweetness to it as well .
Ingredients
Two Big firm tomatoes (seeds removed and chopped up)
One Cucumber (Washed and cut up in any shape you like)
One onion (chopped up, Feel free to skip if you're not an onion fan)
One mango (firm, ripe, deskinned and chopped up)
Half a lemon (all the juice)
Pomegranate seeds for topping.

Add all the vegetables in a salad bowl, add the lemon juice , toss it all together and top with your pomegranate seeds. .
Finito!!
You can add olive oil or salad cream or any other dressing that you like.
I usually don't add any dressing to it so everyone at home uses whatever dressing they like. My kids prefer mayonnaise as dressing. My son just asked to add raisins and nuts to his. ...sure Yes!!

That Greek salad looks absolutely delish! Working on an app to get it out of the phone and onto my plate! Apart from the pomegranate seeds, I think I can get everything here in Nigeria, so I will give this a shot. I love salads, too!
Wow what a colourful salad and so easy to prepare. I’m trying this after I’ve completed the Chiken recipe. Good thing I bought sizeable bottles of balsamic vinegar and lemon juice.
